Day 3 has arrived! Are you ready for the next installment of yummy goodness? Today, we are making thumbprint cookies. But not just those single itty bitty cookies you are thinking of. We are making Trios. Yep, it is exactly what you think. Three delicious, butter rich cookies with just a smidgeon of gooey sweetness in the center. Have fun with these and mix up the flavors. Maybe some with peach, strawberry, and orange. Or perhaps you would rather have mixed berry-strawberry, blueberry, and raspberry. Here we go! Start by creaming the butter and sugar until light and fluffy. Add egg, salt, and vanilla and mix well. Add flour. Chill dough for a few minutes if it is too soft to handle. Otherwise, roll a teaspoon of dough into a ball. Repeat many times. One at a time, flatten the balls of dough slightly. Arrange them in a triangle shape, touching in the center. Using the handle of a wooden spoon, gently make an indention in the center of each cookie. Fill each indention with jam. It doesn't take a lot so be careful not to make a mess. Bake until the cookies just start to brown at the edge. Allow to cool and enjoy. Printable version |
