Twelve Days of Sweets - Day Two

Sorry this is coming so late in the day. I had to go to the grocery store. With all the cookie baking goin' on, I was low on a lot of stuff!

Anyhow..................

Day 2 is here! Bet you are dying to know what we are making today, huh? Well, before we get into that, i wanted to tell you about..........


OK! OK! I'm just kiddin'!

Today's recipe..........Cran-Raspberry Rugelach


This recipe came about when I went to make a different type of rugelach, but I was soon to realize that I didn't have the ingredients the recipe called for. I started substituting, and this is where I ended up. The boys absolutely love them-more so than the original!






Start off by beating the cream cheese and butter until light and fluffy.










  Add some sugar, salt and vanilla. Mix. Add flour. Mix.











 Roll the dough into a ball and divide it into quarters. Wrap each piece with plastic wrap and chill for a few hours.










To make the filling, combine sugar, brown sugar, cinnamon, dried cranberries, and walnuts.









 Roll each ball of dough into a 9" circle.













Spread a thin layer of red raspberry preserves on top of the dough.





Top the preserves with a 1/2 cup of the filling.


Using a pizza cutter, divide the dough into 12 pieces-like a pizza.
Starting with the wide end, roll up each piece so that it somewhat resembles a crescent roll.

Place on a sheet pan. Chill for 30 minutes. Brush tops with egg wash and sprinkle with cinnamon sugar.

Bake for 15 to 20 minutes or until golden brown and delicious.
