December is here! There are sweets to make and presents to wrap. Who am I kiddin'? I still have to go shoppin'! I can still roll out the sweets though.
All over the web, Cookie Week has begun!
Here at The Housewife, I am doing a Twelve Days of Sweets! I had to be different.
Starting today, then every other day through Dec. 23rd, I will be posting a cookie or candy recipe. It may be a tried and true, or it could be a new one I have decided to whip up for the holidays. There will definitely be a few classics sprinkled throughout, as it isn't Christmas without some of them.
To start things off, we are doing Buckeyes. Buckeyes, also known as Peanut Butter Balls,
are one of the greatest combinations of flavors EVER! You can't get any better than chocolate and peanut butter. For a great variation on these, use dark chocolate. It makes such a difference!
Want a tip? Make them now and freeze 'em. That's right! There is no need to wait until the week before-or days before-Christmas to make these little bites of absolute goodness. Just make as directed, placing on waxed paper on a sheet pan to dry. When dry, move to the freezer. Put them in a zip top bag, and store in the freezer until you need them......or your will power has run out. Whichever comes first.(For me it is the latter!) Now on to the good stuff!
5 ingredients: Peanut butter, butter, vanilla, powdered sugar, and chocolate chips.
Mix everything except chocolate chips in your stand mixer.
Roll into 1 inch balls and place on a sheet pan lined with waxed paper.
Into the freezer they go!
In a double boiler, melt chocolate chips carefully-be careful not to burn the chocolate!
Dip the peanut butter balls into the chocolate-not all the way, just about 2/3 of it.
If you would like something more festive, gently roll the buckeyes in coconut, chopped nuts, or nonpareils. Edible glitter would be pretty too!
Place back on the waxed paper and allow to dry.
Tip: Put them out on the porch if it is cold outside. They will dry really quick. Just be aware of little fingers and our 4 legged furry friends. They can't resist the chocolate/peanut butter combo either!
