He also wants bread. Not cornbread as most people would want with a bean soup, but a nice crusty bread. OK back to the 1000's of bread recipes I have.
Today's choice: Artisan Bread in 5 Minutes!
That's right! Yummy, warm artisan bread can be yours in just 5 minutes a day! Mix up this recipe and you can have 4 loaves of fresh bread over the next 2 weeks by investing 5 minutes of time.
This recipe comes from the book, Artisan Bread in Five Minutes a Day. I don't own the book yet, but I will. This is one of those books that you can't pass up-whether you are an experience baker or a complete novice.
So here we go!
Pour warm water into a lidded container-not airtight! It could explode on you if it is sealed completely-don't ask how I know.
Add yeast and proof.
Mix in flour and salt until there are no longer any dry spots.
Cover with lid and allow to rise at room temp until dough begins to collapse. At this point, you can move the dough to the fridge to save for later or bake some up now.
NOTE: Cold dough is much easier to work with.
Preheat oven to 450. Place broiler pan on lowest rack.
Dust the dough with flour and cut off a grapefruit sized piece of the dough.
Dust again with flour and form into a ball by pulling one side down and under. Turn 1/4 turn and repeat. The bottom will be lumpy but the top should be smooth.
Place on a pan that has been dusted with cornmeal to prevent sticking. Allow to rise for 40 minutes.
Dust with flour one more time and cut 3 or 4 slashes across the top to allow the bread to expand during baking.
Place in oven. Quickly pour a cup of water into the broiler pan and close the door to trap the steam and heat. Bake for 30 minutes.
See? Totally simple. Anyone can make this bread.
