Holidays and Baking

I love the holiday season! OK, I don't love the crowded stores and stress of finding the perfect present. I love the baking....pies, cakes, candies, fudge.....and cookies.

Lots and lots of cookies!

Every year, I bake anywhere from 5 to 8 varieties of cookies, plus at least 5 kinds of pie and who knows how many types of candies and fudge.

This year will be no different.



This year, I will, however, be trying a few new recipes.

But not yet.

Today is my tried and true, no fail, as easy as it gets Peanut Butter Cookies.

Four ingredients. No difficult directions. Just mix, bake, and enjoy. Preferably with a nice cold glass of milk.
So here is the recipe...

This is what you will need. Don't worry, the recipe is at the bottom.

Put everything in the bowl of a stand mixer, and mix well.

Using a small cookie scoop, place 12 little mounds of cookie dough on a sheet pan.

Using a fork, dipped in sugar, press down on the tops of the cookie dough. Press down once, lift, and rotate 90 degrees and press again.

They look just like grandma's!!

Bake at 350 until the edges are just browned.

Allow to cool just a bit. Warm peanut butter cookies are awesome. Hot peanut butter cookies that scorch your mouth are not awesome.

Peanut Butter Cookies


Ingredients
2 cups sugar
2 cups peanut butter, crunchy or creamy
2 eggs
1 tsp. vanilla


Directions:
Preheat oven to 350°.

Place all ingredients in the bowl of your stand mixer.

Mix until well combined.

Scoop onto cookie sheet.

Bake for 12-15 minutes.

Allow to cool, then enjoy with a glass of cold milk.
